Pizza in Italy is tradition, identity, pride

In Italy, pizza is more than just a dish: it is tradition, identity, pride. What makes it so special compared to the rest of the world is not only the skill of our pizza makers, but also – and above all – the quality of the ingredients, starting from the flour to the toppings. Another key secret is the rising time of the dough.

Our pizzas are prepared with the highest quality local flours and raw materials. The result? Pizzas that are light, digestible and full of flavor. It is worth mentioning that, in 2017, UNESCO recognized the art of the Neapolitan pizza maker as an intangible cultural heritage of humanity, confirming the role of pizza as a symbol of Italianness in the world.

Among the most characteristic items on our menu is the “pizza with gota cotta,” a tribute to our town. Colle di Val d’Elsa’s gota cotta is a delicacy with over fifty years of history. Prepared by the skilful hands of chef Iacopo Pereira at Frantoio Restaurant, in the heart of the historic center and a stone’s throw from Bar Pizzeria Santa Caterina, this specialty is combined with our ingredients to give life to one of the most mouth-watering – or, as we like to say, most enjoyable – pizzas on our menu.
